Wine Shine

Wine Shine passionately crafts artisan spirits in the heart of the Central Coast. They are committed to blending age-­old distillation techniques with innovative nuanced flavors that will entice your palate. Throughout the ages, distilleries have sourced whichever raw products are locally abundant.  Located in the heart of California wine country (based out of Tin City in Paso Robles), their practice is no different. Wine Shine sources grape juice from world renowned local vineyards to be fermented and distilled into world class brandies.  Their brandy boasts beautiful botanical characteristics, which is representative of the quality of wine prior to distillation.  Their handcrafted brandies are then aged in new French and American oak barrels or infused with premium California fruits and botanicals to create some of the finest libations available.

Manhattan Project is Wine Shine’s handmade barrel aged expression of the classic cocktail, the Manhattan.  Their whiskey is barrel aged and blended with vermouth and bitters, all made in house, for additional barrel aging in a Saxum grenache barrel they have soaked house made port wine in.  Only the finest local botanicals procured from organic purveyors go into their vermouth and bitters.  Both  Manhattan Project libations (both whiskey or brandy based) are truly hand crafted from start to finish.  Manhattan Project elevates the cocktail in a bottle concept to a new level, we are sure you'll agree.
