Thacher KR Apple Grape Wine

The first bottling started in the early fall 2020; After several harvesting passes were made through Thacher's Kentucky Ranch apple orchards, they eventually yielded 4.5 tons of fruit from over 20 different heirloom apple varieties. After several weeks of sweating, the fruit went through a grinding process and was allowed to macerate for 24 hours before being basket-pressed. The juice was roughly settled, racked and combined with a small percentage of the ranches red grapes. The juice was then innoculated for a long, cool fermentation. The finished cider was bottled, unfiltered and unfined in the following winter. 93% Heirloom Cider Apples, 7% Alicante Bouschet - 180 cases produced
